Ingredients:

  • 1 tbsp. baking soda
  • 4 eggs
  • 4 cups flour
  • 1/2 cup almonds
  • 2 cups sugar
  • 1/2 tsp salt
  • 1 cup 1% milk
  • 1/2 cup vegetable oil
  • 3 tsp. cinnamon

Directions:

  1. Combine bananas, sugar, soda, and salt and blend in mixer at medium speed for one minute.
  2. Add eggs, one at a time, then mix flour, oil and milk. Beat 2 minutes then fold in nuts.
  3. Pour batter into greased, floured loaf pans and sprinkle the top with cinnamon and/or brown sugar.
  4. Bake on center rack for 2.5 hours at 275 degrees.
