Strawberry Mousse

Ingredients:

  • 2 cup hulled strawberries (about 1 pint)
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1 pkt. plain gelatin(about 1 tbsp)

Directions:

  1. Combine strawberries,sugar and lemon juice in food processor and blend till smooth,about 30 seconds. Transfer to a large bowl and whisk in gelatin.
  2. Beat cream until it holds soft peaks. Fold 1/4 of cream into strawberry mixture to lighten it,then gently fold in remaining cream.
  3. Portion mousse into serving cups and chill at least 4 hours before serving.
