Light,fruity dessert for the summer. Can swap out any berries you like with this recipe. Ingredients:
2c hulled strawberries(about 1 pint) |
1/2c sugar |
1tbs lemon juice |
1 pkt. plain gelatin(about 1 tbs) |
1c heavy cream |
Directions:
1. Combine strawberries,sugar and lemon juice in food processor and blend till smooth,about 30 seconds. Transfer to a large bowl and whisk in gelatin. 2. Beat cream until it holds soft peaks. Fold 1/4 of cream into strawberry mixture to lighten it,then gently fold in remaining cream. 3. Portion mousse into serving cups and chill at least 4 hours before serving. |
