Ingredients:

  • 1/2 cup rice flour
  • 1/8 cup potato starch
  • 1 cup bob's gf oatmeal
  • 1 cup sugar
  • 1 egg
  • 3/4 cup skim milk
  • 1/2 cup oil
  • 2 tbsp cinnamon
  • 1 tsp salt

Directions:

  1. Chop apples.
  2. Add all ingredients in a large bowl.
  3. Stir.
  4. Bake in a greased muffin tin at 350 for 20 - 25 minutes.
