Ingredients:
1/2 cup rice flour
1/8 cup potato starch
1/8 cup tapioca starch
1 cup bob's gf oatmeal
1 cup sugar
1 egg
3/4 cup skim milk
1/2 cup oil
2 cups chopped apples
2 teaspoons baking powder
2 tablespoons cinnamon
1 teaspoon salt
1 teaspoon xanthan gum
Directions:
1. Chop apples.
2. Add all ingredients in a large bowl.
3. Stir.
4. Bake in a greased muffin tin at 350 for 20 - 25 minutes.
