Spareribs - Dry Rub

Ingredients:

  • 2 tbsp salt
  • 2 tsp cayenne
  • 1 tbsp cumin
  • 2 tsp allspice
  • 2 tbsp chili powder
  • 3 tbsp paprika
  • 1 tbsp onion powder
  • 3/4 cup sugar
  • 1/3 cup molasses

Directions:

  1. Mix molasses and sugar together stir.
  2. Add all other ingredients and mix well.
  3. Use rub generously on spare ribs (I prefer cooking slowly at 200°F for about 4 to 5 hours, wrapped in heavy foil, finishing on outdoor grill with favorite barbecue sauce).
  4. Rub is sufficient for two to three full rack of ribs.
  5. I have retained juices from cooking as extra sauce when serving ribs.
