Ingredients:

Directions:

  1. Begin cooking the potatoes in a 12 inch skillet with a little oil in the bottom of the pan. Cover and let cook, stirring occasionally until the potatoes are starting to brown, about 12 minutes.
  2. In another skillet, melt the butter and combine with lime juice. Stir in the frozen shrimp and cover until shrimp is thawed, about 5 minutes.
  3. In a sauce pan combine milk, flour, and butter and heat on medium until the sauce begins to thicken. Remove from heat and quickly whisk the grated cheese into the sauce.
  4. Layer the potatoes, shrimp, and sauce with the remaining ingredients into two bowls and enjoy!
