Savory Stuffed Pork Chops

Ingredients:

  • 4 pork chops (1 1/2 inch thick , pick chops that are pale pink and have the least amount of fat on them. darker cho)
  • salt and pepper
  • 2 tbsp butter
  • 1/2 cup chopped onion
  • 1/4 tsp sage
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp vegetable broth or 2 tbsp water

Directions:

  1. Preheat oven to 350 degrees F.
  2. Trim fat from chop cut a 2 inch pocket in each pork chop. Sprinkle each pocket with salt and pepper; set aside.
  3. Melt butter in a large skillet over medium heat. Add onion and mushrooms, saute until tender.
  4. Remove from heat and stir in sage, salt, pepper and bread crumbs.
  5. Add enough broth to hold stuffing together, them spoon into pockets.
  6. Secure pockets with kitchen twine or toothpicks place on baking dish.
  7. Cover with lid or foil and bake for 30 minutes.
  8. Remove cover and bake for 20 minutes or until tender.
