Royal Coconut Cake With Blueberry Filling

Ingredients:

Directions:

  1. Cake:
  2. Butter and flour 3, 9 inch cake pans.
  3. Line with wax paper.
  4. Sift dry ingredients except sugar
  5. Beat eggs and sugar till well blended and then beat in butter, milk and vanilla.
  6. Blend in flour mixture on low speed until well blended.
  7. Divide batter in pans.
  8. Bake 350 F about 20 minutes or tested done.
  9. Cool in pans.
  10. Then using pastry brush, brush cooled layers with vanilla syrup.
  11. Let cake layers soak up all syrup.
  12. For vanilla syrup bring all to a boil for 3 minutes and then remove and cool completely.
  13. For filling:
  14. Mix all until well combined and chill well.
  15. To assemble cake:
  16. Fill all layers and even spread top with the coconut blueberry filling.
  17. At this point chill well or freeze if desired.
  18. For frosting: Beat cream cheese and butter until smooth.
  19. Beat in salt and sugar and milk and vanilla until silky and smoth
  20. Carefully frost cake.
  21. Garnish as desired
