Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease two 12-cup muffin tins.
  3. Mix toigether pumpkin, sugar and butter.
  4. Add eggs and whisk until smooth.
  5. Stir in cider.
  6. Sift dry ingredients together and slowly add to liquid mixture.
  7. Stir until thoroughly mixed.
  8. Fold in ginger spoon or pipe into muffin cups.
  9. Bake until golden- about 20 minutes.
