Pumpkin Chocolate Loaf

Ingredients:

  • 3 1/2 cups sugar
  • 1 1/4 cups vegetable oil
  • 3 eggs
  • 1 (29 oz) can solid- pack pumpkin
  • 1 1/2 tsp vanilla extract
  • 3 3/4 cups all-purpose flour
  • 1 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 1/4 tsp baking soda
  • 1 1/4 tsp ground cinnamon
  • 1 -1 1/4 tsp ground cloves
  • 1/2 tsp ground nutmeg

Directions:

  1. In a large bowl, combine sugar and oil.
  2. Add eggs and mix well.
  3. Stir in the pumpkin, and vanilla.
  4. Combine the dry ingredients.
  5. Stir into pumpkin mixture just until blended.
  6. Stir in chips.
  7. Transfer to three greased 9x5x3 inch loaf pans.
  8. Bake at 350 degrees for 55-65 minutes or until a toothpick inserted near the center comes out clean.
  9. Cool for 10 minutes before removing from pans to wire racks.
  10. Wrap and freeze for up to 6 months.
  11. Yield: 3 loaves.
