Ingredients:

  • 2 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup butter
  • 1/3 cup sugar
  • 3/4 cup peanut butter
  • 1 tbsp honey
  • 2 large eggs
  • 1 1/2 cups salted peanuts

Directions:

  1. Preheat oven to 375 degrees.
  2. Mix flour, baking powder and baking soda in a small bowl.
  3. Cream the butter and sugars together.
  4. Add peanut butter, honey, eggs and vanilla and beat until light and fluffy.
  5. Add dry ingredients.
  6. Mix.
  7. Fold in the peanuts.
  8. Spoon batter onto greased cookie sheets about two inches apart.
  9. With the back of spoon, flatten the dough to 1/2 inch to 3/4 inch in thickness.
  10. Bake cookies for nine to ten minutes or until done (Do not over bake).
  11. Let rest on baking sheet for a minute and then move them to wire racks to cool.
