Ingredients:

Directions:

  1. 1. Heat oven to 350'
  2. Use 1- 15 oz can of pumpkin
  3. Spray individual muffin cups or use muffin liners
  4. Grind oatmeal in coffee grinder until consistency of flour.
  5. Mix pumpkin, flour, oat flour, cocoa, baking powder, vanilla, salt, 1 1/2 cups Splenda and water.
  6. In separate small bowl mix peanut flour, 1/3 cup splenda, 1/4 tsp salt and 1/4-1/3 cup of water until the consistency of peanut butter.
  7. Measure a level tablespoon of brownie mixture into each muffin cup. Press lightly. Spoon in 1 tsp of peanut butter mixture as a little mound in the center of the brownie base. Then cover peanut butter with another tbsp of brownie mixture. Pat down lightly. Repeat this until you have filled each muffin cup.
  8. Cook in oven for about 18 minutes. When done invert pan immediately and ice while still warm.
  9. To make icing melt chocolate chips and butter in microwave stirring after every 10 seconds until smooth.
  10. Put about a 1/2 tsp of icing on each brownie and spread evenly.
  11. TIP: if you need to clean your coffee grinder...add a tablespoon of white rice and run it for a couple of bursts. Then wipe it clean.
