Ingredients:

  • 1 tsp butter
  • 1 medium onion
  • 1/4 cup celery
  • 1 cup water
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 3/4 cup dry rice
  • 1 (10 oz) can hot rotel tomatoes
  • 2 tsp sugar
  • 1 cup cheese

Directions:

  1. Sauté onion, butter,celery.
  2. Add all other ingredients (except cheese); bring to boil, reduce, cover and cook until liquid is absorbed about 20 minutes.
  3. Transfer to serving dish and add cheese.
