Orange Salad Cups

Ingredients:

  • 3 large oranges
  • 1 large red apple
  • 1/3 cup diced celery
  • 3 tbsp mayonnaise
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 6 walnut or pecan halves

Directions:

  1. Cut each orange in half. If you are artistic, you may cut them with zigzag edges. (I am not artistic; I would probably cut myself or ruin my orange cups.)
  2. Cut the pulp out of the orange halves with a grapefruit knife, then cut pulp into small pieces and put them in a small bowl.
  3. Save your empty orange halves. They are your cups for the salad.
  4. Core and dice the unpeeled red apple.
  5. Combine orange pulp, diced apple and celery.
  6. Mix the mayonnaise together with the salt and sugar, then mix into the fruit and celery mixture.
  7. Divide the mixture between the orange cups.
  8. Top each cup with a nut half.
  9. Serve chilled. You may hold the cups in the refrigerator up to 2 hours before serving.
