Oatmeal Cherry Cookies (Martha Stewart)

Ingredients:

  • 1 1/4 cups flour
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 cup honey
  • 2 large eggs
  • 1 1/2 tsp vanilla
  • 3 cups rolled oats
  • 1 1/2 cups dried cherries

Directions:

  1. Heat oven to 350°F Use a silpat or parchment paper on your cookie sheets for best results.
  2. Whisk flour, cinnamon, baking soda, nutmeg and salt in a bowl.
  3. Cream butter,sugar and honey in a mixer until creamy.
  4. Add the eggs and vanilla and mix well.
  5. Slowly add the flour mixture, mixing on low just until incorporated.
  6. Stir in oats and cherries by hand.
  7. Scoop tablespoon sized drops onto a cookie sheet. Bake 10 minutes. Watch very closely the last 2 minutes, they go from done to over done very quickly.
  8. Allow to cool for a few minutes on the cookie sheet before moving to a cooling rack.
