Medeltida Brod (Middle Ages Bread)

Ingredients:

  • 2 1/4 tsp yeast
  • 1/2 cup lukewarm water
  • 1 tsp salt
  • 1/3 cup honey
  • 1/4 cup melted butter
  • 2 cups barley flour

Directions:

  1. Dissolve yeast in water.
  2. Add sourdough starter, salt, honey and butter.
  3. Stir until well-blended.
  4. Add flours and blend.
  5. Turn onto a lightly floured surface and knead for a couple of minutes.
  6. Place dough in a large buttered bowl, turning to coat all sides.
  7. Cover with a towel and let rise in a warm place for about 1 hour, or until doubled in bulk.
  8. Punch down and knead for a couple of minutes.
  9. Divide dough into 2 equal pieces.
  10. Shape each piece into a ball.
  11. Place on a lightly greased baking sheet, cover, and let rise until doubled, about 45 minutes.
  12. Preheat oven to 375°.
  13. Bake for about 30 minutes, or until loaves are browned and sound hollow when tapped with a finger.
  14. Cool wrapped in a towel.
