Adapted from Breads of the World. Ingredients:
2 1/4 teaspoons yeast |
1/2 cup lukewarm water |
2 cups sourdough starter |
1 teaspoon salt |
1/3 cup honey |
1/4 cup melted butter |
2 cups barley flour |
2 cups whole wheat flour |
1 cup all-purpose flour |
Directions:
1. Dissolve yeast in water. 2. Add sourdough starter, salt, honey and butter. 3. Stir until well-blended. 4. Add flours and blend. 5. Turn onto a lightly floured surface and knead for a couple of minutes. 6. Place dough in a large buttered bowl, turning to coat all sides. 7. Cover with a towel and let rise in a warm place for about 1 hour, or until doubled in bulk. 8. Punch down and knead for a couple of minutes. 9. Divide dough into 2 equal pieces. 10. Shape each piece into a ball. 11. Place on a lightly greased baking sheet, cover, and let rise until doubled, about 45 minutes. 12. Preheat oven to 375°. 13. Bake for about 30 minutes, or until loaves are browned and sound hollow when tapped with a finger. 14. Cool wrapped in a towel. |
