Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 6 tsp cinnamon
  • 1 cup oil
  • 1 tsp salt
  • 2 cups flour
  • 1/4 tsp baking powder

Directions:

  1. In a large bowl mix eggs, sugar, and oil together.
  2. Add zucchini.This will be a soupy-like consistency.
  3. Add vanilla.
  4. Mix in dry ingredients.
  5. Grease and flour 2 loaf pans.
  6. Bake at 350°F for 1 hour.
  7. This can be wrapped in aluminum foil, put in ziploc bags, and frozen when cool.
