Mary Ann's Zucchini Bread |

This is from the kitchen of my Aunt Mary Ann. I wasn't a zucchini bread fan until I had this. Ingredients:
3 eggs |
2 cups sugar |
6 teaspoons cinnamon |
6 teaspoons vanilla extract |
1 cup oil |
2 cups grated zucchini |
1 teaspoon salt |
2 cups flour |
1/4 teaspoon baking powder |
2 teaspoons baking soda |
Directions:
1. In a large bowl mix eggs, sugar, and oil together. 2. Add zucchini.This will be a soupy-like consistency. 3. Add vanilla. 4. Mix in dry ingredients. 5. Grease and flour 2 loaf pans. 6. Bake at 350°F for 1 hour. 7. This can be wrapped in aluminum foil, put in ziploc bags, and frozen when cool. |
