Mango  And Mint  With Warm Blackberry Coulis  Dess...

Ingredients:

Directions:

  1. In a small pan gently warm 1 cup of the blackberries with 1/4 cup sugar and 2 tablespoons of cold water until the sugar dissolves completely.
  2. Allow the mixture to bubble gently so that the blackberries collapse, creating a thick fruity liquid.
  3. Remove from heat and leave to cool.
  4. Using a blender to puree into a rich smooth coulis, stir in the cassis and set aside.
  5. Sprinkle 1 tablespoon of the sugar over two slices of the brioche.
  6. Arrange the mango slices on top and then scatter the shredded mint leaves and remaining blackberries over them.
  7. Top with the lids and sprinkle the surface with the remaining sugar.
  8. Toast in a sandwich grill for 2 - 3 minutes, until the bread is golden and crispy.
  9. Cut sandwiches in half and serve immediately.
  10. Serve with a drizzle of the warm coulis, some crème fraiche, and mint sprig on each, and dust slighty with powdered sugar………..
