Lemon Tea Cookies

Ingredients:

  • 1 2/3 cups flour
  • 1/3 cup confectioners' sugar
  • 1 tsp vanilla
  • 2/3 cup sugar
  • 1 tsp cornstarch
  • 1 tsp salt
  • 3 tbsp lemon juice
  • 1 tbsp margarine
  • confectioners' sugar

Directions:

  1. In medium bowl, combine first 4 ingredients; blend well.
  2. Chill dough.
  3. Heat oven to 350 degrees F.
  4. Shape dough into 1-inch balls.
  5. Place on ungreased cookie sheets.
  6. With thumb, make imprint in center of each cookie.
  7. Bake 8-10 minutes until lightly brown.
  8. Cool.
  9. To make filling, combine all filling ingredients in medium saucepan, except for confectioners sugar.
  10. Cook over low heat, stirring constantly until smooth and thickened.
  11. Cool.
  12. Top each cookie with filling.
  13. Sprinkle with confectioners sugar.
  14. Store single layer, loosely covered.
