Healthy Peach & Blueberry Cobbler

Ingredients:

  • 3 tbsp butter
  • 3 tbsp canola oil
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup skim milk
  • 1/2 cup sugar
  • 2 cups blueberries

Directions:

  1. Preheat oven to 350 F
  2. Place butter and oil in a 9X13 inch baking pan. Heat in the oven until melted, ~6 minutes.
  3. Combine flour, baking powder and salt in a large bowl. Add milk, sugar, vanilla; stir to combine.
  4. Add the melted butter mixture to the batter and stir. Pour the batter into the hot pan. Spoon diced peaches and blueberries evenly over the batter.
  5. Bake until the top of the cobbler is browned and the batter around the fruit is completely set, about 50 to 60 minutes. Cool for 15 minutes and serve warm.
