Ingredients:

  • 1/3 cup sugar
  • 1/2 cup packed brown sugar
  • 1/3 cup packed flaked coconut
  • 2/3 cup chopped dates
  • 2 cups flour
  • 1 tsp vanilla

Directions:

  1. In a large bowl combine flour, baking soda and baking powder.
  2. Add butter, egg and vanilla.
  3. Mix until thoroughly blended.
  4. Roll dough into walnut sized balls and place 2 inches apart on a lightly greased cookie sheet.
  5. Press down slightly with the heal of your hand to flatten.
  6. Bake at 350ºF for 11 to 13 minutes or until edges are lightly browned.
  7. Cool 5 minutes on cookie sheet; then remove and cool completely on wire racks.
