Ingredients:

  • 1/3 cup chopped dates
  • 1/3 cup golden raisin
  • 2 cups milk , i used vanilla soy
  • 1/3 cup sucanat
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup milk , i used vanilla soy

  • 1/8 tsp salt
  • 2 tsp vanilla

Directions:

  1. Preheat the oven to 350 degrees.
  2. Place the whole-grain bread cubes in a large bowl and add the grated apple, dried fruits, milk, Sucanat, cornstarch, cinnamon, nutmeg, and salt.
  3. Mix well, then spoon into a 9x9-inch baking dish.
  4. Cover with foil and bake for 40 minutes.
  5. Remove from the oven and discard the foil.
  6. To prepare the sweet milk sauce, mix the milk, Sucanat, cornstarch, and salt in a saucepan and heat, stirring constantly, until thickened. Stir in th vanilla and pour over the pudding before serving.
