Drop Biscuits with Apricot Spread

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine all dry ingredients in one bowl.
  3. Whisk liquid ingredients together in another bowl.
  4. Add liquid to dry and stir just until mixed. Batter should be stiff.
  5. Drop by tablespoonfuls onto lightly greased cookie sheet. Bake 10-15 minutes or until golden on top.
  6. Meanwhile, make apricot spread by simmering apricots in juice until soft, about 10 minutes. Place in blender or food processor and add vanilla and blend until smooth.
