Ingredients:

Directions:

  1. Dice and boil potatoes until fork tender.
  2. While boiling potatoes, hard boil your eggs.
  3. Let eggs and potatoes cool.
  4. Then peel and dice eggs.
  5. Mix potatoes, eggs, mayo, mustard, relish, onion, celery, cajun seasoning, salt and pepper.
  6. Make sure to mix lightly so not to mash the potatoes.
  7. Chill for no less than 3 hours.
