Crispy Oven-Fried Chicken

Ingredients:

  • 2 cloves garlic, peeled
  • 4 slices white bread , torn into pieces,sandwich bread works well as does english muffins
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp sage or 1 tsp thyme
  • 2 tbsp butter
  • 1/4 cup milk

Directions:

  1. Preheat oven to 375.
  2. Line baking sheet with foil, then spray with Pam.
  3. Make breading by placing the peeled garlic in food processor or blender, process til finely chopped.
  4. Add bread, cheese and salt and pepper, pulsing til bread is finely crumbed.
  5. Add sage and pulse to combine.
  6. Cut butter into small pieces and add pulsing until completely incorporated.
  7. Transfer to a plastic bag.
  8. Place milk in a shallow bowl.
  9. Dip the chicken pieces in tthe milk and then place them one at a time in the bag of breading.
  10. Shake until the chicken is well coated.
  11. Place on the foil lined sheet leaving spaces between pieces.
  12. Bake until the coating is crisp and juices run clear, when pierced, about 40-45 minutes.
