  1. In a large saucepan, melt butter and saute diced onion until limp and glossy,.
  2. Add the 3 cups water to the saucepan and bring to a boil.
  3. Gradually stir in cornmeal and water mixture into the boiling water and WHISK constantly until thick and smooth.
  4. Let mixture cook, stirring often, about 20 minutes.
  5. Stir in grated Parmesan cheese and season to taste with salt.
