Ingredients:

Directions:

  1. Place all ingredients except parsley and seasonings in soup pot covered.
  2. Allow coming to boil then lower heat and skim the surface.
  3. Add parsley and seasonings and allow soup to continue cooking slow boil until cooked.
  4. Cool soup overnight in refrigerator.
  5. Remove chicken and vegetables from cooled soup.
  6. Carefully remove chicken from the bone and shred into chunks then chop vegetables.
  7. While preparing chicken and vegetables soup should be heating in a large pot.
  8. Bring to boil then add vegetables that have been defrosted.
  9. When mixed vegetables are cooked add shredded chicken and fresh cooked vegetables.
  10. Serve hot with grated Parmesan cheese.
