Cold Sesame Noodles with Chicken and Cucumbers

Directions:

  1. Cook chicken breast and shred or cube.
  2. Cook noodles according to package instructions. Once cooked cool with cold water.
  3. Whisk vinegar, oil, soy sauce, honey, chili paste, and ginger together in a large bowl.
  4. Add noodles, chicken, and cucumbers to bowl; toss gently to coat.
  5. Top with 1 tablespoon onions and 1 1/2 teaspoons peanuts per 1 cup serving.
