Cold Sesame Noodles with Chicken and Cucumbers |

excellent cold from fridge - pack for lunch Ingredients:
8 oz angel hair pasta |
1/4 cup rice vinegar |
2 tbs sesame oil |
2 tbs soy sauce |
1 tbs honey |
2 tsp chili paste |
1/2 tsp fresh ginger, ground and bottled |
2 cups chicken breast, cooked & shredded |
2 cucumbers, halved lengthwise and sliced |
6 tbs green onions, chopped |
3 tbs dry roasted peanuts, chopped |
Directions:
1. Cook chicken breast and shred or cube. 2. Cook noodles according to package instructions. Once cooked cool with cold water. 3. Whisk vinegar, oil, soy sauce, honey, chili paste, and ginger together in a large bowl. 4. Add noodles, chicken, and cucumbers to bowl; toss gently to coat. 5. Top with 1 tablespoon onions and 1 1/2 teaspoons peanuts per 1 cup serving. |
