Coconut Shrimp Balls

Ingredients:

  • 1 cup flour
  • 3/4 cup water
  • 1 egg
  • 1 small pinch of sugar
  • 2 cups veg oil
  • 1 cup coconut

Directions:

  1. Mix dry ingredients included coconut
  2. Add water, oil and egg, club soda (mix well, batter should cling to shrimp)
  3. Use a fork and scoop out one shrimp at a time placing into hot oil.
  4. Fry until brown, remove and place onto papertowel or something to drain off excess oil. It tasted like it would go great with a honey mustard sauce.
