Coconut Scallop Stir-Fry

Ingredients:

  • 4 oz small sea scallops

Directions:

  1. Combine coconut milk and soysauce in a bowl.
  2. Add scallops.
  3. Let sit for 10 minutes.
  4. Heat your choice of cooking spray in medium size frying pan at medium high heat. when pan is nice and hot use slotted spoon to spoon scallops into the pan. let cook for 5 minutes. move them around alot during the cooking. reduce heat and add 3 tbsp of the coconut milk soysauce mixture to pan and let cook another 2 mins moveing them around several times. make with white rice.
  5. Note: if you need to make more just double the ingredients for every 4 oz. if you like to use giant scallops add more ingredients. enough for them to be able to swim in the coconut soy mixture.
