Ingredients:

Directions:

  1. Sift the cake flour twice.
  2. Using 2 large mixing bowls, sift together twice, flour, sugar, salt, baking powder and cocoa.
  3. Transfer to a medium mixing bowl.
  4. Add butter.
  5. Mix until everything is fine and crumbly like wet sand.
  6. Add oil, eggs, vanilla and milk.
  7. Mix well.
  8. Mix with hand mixer on highspeed for 4 minutes until thick and fluffy.
  9. Spoon into greased muffin tins to the top.
  10. Bake for 26 - 27 minutes on 180 degrees.
  11. Let the cupcakes cool for 7 minutes bfore transferring to a cool rack.
  12. Store the cupcakes after cooling in an airtight plastic container overnight to soften the edges for cutting.
  13. Assembling the trees:
  14. Cut 12 red and 12 green cherries into quaters and then each quarter into 6 - 8 bits.
  15. Place in separate bowl for later use.
  16. Whip up the cream.
  17. Place cupcake upside down on a cutting surface.
  18. Slice off the bottom of cupcake.
  19. Set bottom aside.
  20. Take the cap and place it upright.
  21. Carefully slice a bit off the top to make the tree top (1st layer)
  22. Slice rest of the cap into two equal layers.
  23. Place the bottom part upright and scoop out a hole using a melon baller or knife.
  24. Using a pastry bag fitter with a star tip, pipe out a bit of toppint into the hole.
  25. Insert a whole cherry.
  26. Pipe out topping to cover the cherry.
  27. Place bottom layer with top cut side facing up, over the piped topping.
  28. Pipe cream over it
  29. Repeat with other layers.
  30. Don't pipe anyting on top yet.
  31. Sprinkle rainbow sprinkles all around.
  32. Put cut cherries all around.
  33. Pipe out a star on top.
  34. Put silver dragee on top.
  35. Sift some icing sugar over.
