Ingredients:

  • 1/2 cup. semi-sweet chocolate pieces
  • 1/8 to 1/4 tsp. peppermint extract
  • 1 1/4 cup. all purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup. sugar
  • 1/2 cup. brown sugar (firmly packed)
  • 1/2 cup. shortening
  • 1/2 cup. peanut butter
  • 1 egg

Directions:

  1. In a small sauce pan melt chocolate pieces over (low heat)
  2. Stirring constantly
  3. Remove from heat
  4. Stir in peppermint extract
  5. Set aside and cool
  6. In a large bowl ,combine remaining ingredients
  7. Blend well with mixer
  8. Add: melted chocolate and stir well
  9. Shape into balls, using rounded teaspoon
  10. Place balls onto Un-greased cookie sheet
  11. Flatten with bottom of glass (that has been greased and dipped in sugar)
  12. Bake 375 degrees
  13. High altitude adjustment (5200 feet) Decrease soda to 1/2 tsp.
