Chocolate Mint Cookies

Ingredients:

  • 1 1/4 cups shortening
  • 2 cups sugar
  • 1/3 cup corn syrup
  • 2 1/2 tbsp water
  • 2 tsp peppermint extract
  • 4 cups flour
  • 1/2 tsp salt
  • 1/3 cup sugar

Directions:

  1. Melt chocolate in a double boiler or microwave.
  2. Cream shortening and gradually add 2 cups sugar, beating until light and fluffy.
  3. Add chocolate, eggs, corn syrup, water and flavorings.
  4. Mix well.
  5. Combine flour, soda and salt.
  6. Add to creamed mixture.
  7. Beat just until blended.
  8. Form into 1 inch balls,roll in sugar.
  9. Bake on ungreased cookie sheets at 350 for 10 minutes.
  10. Cool 5 minutes before removing from pan.
