  1. Prepare grill.
  2. Heat 1 teaspoon olive oil in a small skillet. Add onion and garlic; sauté 3 minutes or until onion is tender
  3. Combine onion mixture, remaining 1 1/2 teaspoons olive oil, lime rind, and next 4 ingredients in a small bowl.
  4. Thread 3 shrimp and 1 lime wedge onto 12 (6-inch) skewers. Brush with lime juice mixture. Place on grill rack coated with cooking spray; grill 6 minutes on each side or until shrimp turn pink.
  5. Note: If you use wooden skewers, be sure to soak them in water for 30 minutes to prevent the wood from burning on the grill.
