Carrot Cookies With Orange Icing

Ingredients:

Directions:

  1. Beat shortening; gradually add sugar, beating until light and fluffy.
  2. Add egg, carrots and vanilla, beating well after each addtion.
  3. Sift together dry ingredients; stir into carrot mixture and mix well.
  4. Drop by tablespoonfuls onto greased or parchment paper lined baking sheets.
  5. Bake at 350 for about 20 minutes.
  6. Transfer cookies to racks to cool.
  7. Ice cookies with Orange Icing while still warm.
  8. Orange Icing:
  9. Combine juice and orange rind with butter, stir in sifted confectioner's sugar until esired spreading consistency is reached. Add more juice or sugar as needed.
