Candied Baked Sweet Potato And Apples

Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Butter a shallow baking dish 8 X 11.5-inches.
  3. Drain the sweet potatoes and reserve the liquid in a small sauce pan.
  4. To the sweet potato liquid add the brown sugar, Apple Spice Seasoning, orange juice, sherry and Maraschino Cherry Juice.
  5. Heat to boiling and continue cooking to reduce the liquid to a thick syrup (soft candy stage).
  6. Remove the apple's cores and slice the apples into 3/8-inch cross section rings.
  7. Arrange on the bottom of the buttered baking dish. Drizzle on the lemon juice.
  8. Slice the drained sweet potatoes into 3/8-inch slices and arrange on and around the sliced apple rings.
  9. Sprinkle the dark and light raisins and pecans over the top of the sweet potatoes and apples.
  10. Arrange the Maraschino Cherries in the dish.
  11. Pour the candy syrup over the top of the fruit.
  12. Bake in a 350°F oven for 30 minutes.
  13. Allow to cool before serving.
  14. Note: An excellent condiment for Roast Turkey or Pork
