Ingredients:

Directions:

  1. Mix peanut sauce ingredients and set aside.
  2. Heat 2 Tbs peanut oil in a large skillet or wok on medium-high heat.
  3. Add chicken and cook until chicken is cooked through. Remove from skillet and set aside.
  4. Heat remaining 2 Tbs of peanut oil in the skillet.
  5. Add veggies and saute until tender crisp.
  6. Toss the veggies with the chicken and peanut sauce, then serve over rice (I prefer short-grain brown rice).
  7. Tip: You can also marinate the chicken in some of the peanut sauce overnight to let it soak up more of the flavor. You should have plenty of leftover sauce for that.
