Ingredients:

  • 1 1/3 cups walnuts
  • 3 1/4 cups all-purpose flour
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 1/3 cups sugar
  • 3 cups mashed overripe bananas (6 large ones)
  • 1/4 cup sour cream
  • 2 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees with rack in the middle position. Spread walnuts on a baking sheet and bake until they are fragrant and lightly browned (about 10 to 15 minutes), checking often and stirring. Set nuts on a plate to cool & set aside.
  2. Meanwhile, spray 2 (9 by 5 by 3 inch) metal loaf pans with pan spray (or butter).
  3. Sift together flour, baking soda, cinnamon, and salt into a bowl.
  4. Beat together eggs and sugar in bowl of electric mixer at medium-high speed until very thick and pale and mixture forms a ribbon when beater is lifted, about 10 minutes. Reduce speed to low and add oil in slow stream, mixing, then mix in bananas, sour cream, and vanilla. Remove bowl from mixer and fold in flour mixture and walnuts gently but thoroughly.
  5. Divide batter between loaf pans, spreading evenly, and bake until golden-brown and a toothpick comes out clean when inserted into center, 1-1 1/4 hours.
  6. Cool loaves in pans for 10 minutes, then turn out onto rack. Turn loaves right side up and cool completely.
