Bacon And Egg Salad For Sandwiches

Ingredients:

  • 3 tbsp finely minced red onion
  • 1/3 cup mayonnaise
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • original recipe calls for 1/3 cup diced celery. i never keep celery around and i prefer onion so i made this change.

Directions:

  1. In a bowl, combine the eggs, onion, mayonnaise, mustard, salt and pepper. Fold in bacon. Refrigerate any leftovers.
