  1. 1 Make the dressing: Whisk together the vinegar, salt, pepper and jam (if using). Slowly add the olive oil and whisk until emulsified. Let stand for at least 30 minutes, or up to 3 hours.
  2. 2 Prep the pears: As you slice the pears, put them in a bowl with the lemon juice to keep them from turning brown.
  3. 3 Assemble the salad: Just before serving, place the spinach into a bowl and mix with enough dressing to lightly coat the leaves. Put the dressed spinach on a serving platter. Top the greens with the pear slices (drained of any lemon juice), blue cheese, pecans, and dried cranberries. Pour a little extra dressing over the top.
  4. (If you have time, and want to kick this salad up another notch, you can prepare and use candied pecans.)
