Ingredients:

  • 2 eggs
  • 1 tbsp molasses
  • 2 tsp vanilla
  • 3/4 cup butter
  • 1 cup sugar
  • 2 cups flour
  • 1 tsp salt
  • 2 cups oatmeal
  • 1 tsp nutmeg
  • 3 tsp cinnamon
  • 1 cup raisins or 1 cup dried cranberries

Directions:

  1. Combine mixture 1 in a bowl or large glass measuring cup. Mix ingredients well with a fork.
  2. Combine mixture 2 in a large bowl. I use my Kitchen Aide mixer. Beat until creamy.
  3. Add mixture 1 to mixture 2.
  4. Combine mixture 3 and mix thoroughly. Add mixture 3 to mixtures 1 and 2 in the large bowl.
  5. Add mixture 4 to the large bowl and mix until just combined.
  6. Spoon resulting dough onto an ungreased cookie sheet and bake at 375 for 10-13 minutes. It usually takes twelve minutes for me.
  7. Cool on a wire rack.
