Ingredients:

Directions:

  1. Peel celery root, turnip, parsnips, carrots and potatoes then cut into 1/4” cubes.
  2. Combine in a large bowl with garlic and onion then mix well.
  3. Preheat oven to 350.
  4. Heat olive oil in a large deep frying pan over medium high heat.
  5. Add diced vegetables and sauté 15 minutes turning occasionally with a spatula.
  6. Stir in salt, thyme and rosemary.
  7. Add vinegar and toss with vegetables turning rapidly with spatula until vinegar has evaporated.
  8. Place pan of vegetables in oven then roast 45 minutes.
