Ingredients:

  • 1 cup cornmeal
  • 1/2 cup brown sugar , packed
  • 1/2 tsp vanilla
  • 1 cup milk
  • 1/4 cup canola oil

Directions:

  1. Pre-heat oven to 350 degrees.
  2. Mix cornmeal, flour, sugar,and baking powder together. Add egg, vanilla, milk and oil.
  3. Beat until just smooth, do not over beat!
  4. Pour batter into a greased 8 inch square pan or a cast iron pan.
  5. Bake at 350 degrees for approx 20-25 minutes or until golden brown.
