  1. In small bowl, combine dressing ingredients whisking until thoroughly mixed and set aside.
  2. In large bowl combine fruit.
  3. Add dressing and toss until fruit is covered.
  4. Cover and refrigerate at least 1 hour.
  5. *Remove to serving bowl with slotted spoon and garnish with fresh mint, if desired*
