Spinach Madeleine

Ingredients:

  • 2 (10 oz) pkges. frozen chopped spinach
  • 4 tbsp butter
  • 2 tbsp flour
  • 1 (5 oz) can evaporated milk
  • 1 (8 oz) pkge. cream cheese, cut into pieces
  • 3/4 tsp celery salt
  • 3/4 tsp garlic salt
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3/4 cup breadcrumbs ( panko-style) (optional)
  • 2 tbsp melted butter (optional)

Directions:

  1. Cook spinach, drain and reserve cooking liquid.
  2. In a saucepan, melt butter over medium heat. Add flour, stirring until mixture is smooth and blended.
  3. Add onion and cook until soft, but not brown.
  4. In a measuring cup, combine milk with enough reserved spinach liquor to make 1 cup liquid.
  5. Add liquid slowly to onion-flour mixture, stirring constantly to avoid lumps.
  6. Add cream cheese, jalapeno pepper, worcestershire sauce, celery salt, garlic salt, salt, pepper and cayenne pepper. Stir until cheese is melted. Combine with cooked spinach.
  7. Place mixture in a greased 2 quart casserole dish.
  8. Combine bread crumbs and melted butter. Scatter over spinach mixture.
  9. Bake at 350 degrees for 30-35 minutes oe until bread crumbs are browned.
