Ingredients:

  • 3 cloves garlic
  • 1/2 cup flatleaf parsely
  • 2 slices stale bread
  • milk enough to soak bread in
  • 1 small jar pimentos
  • 1 cup dry sherry

Directions:

  1. In a blender or a mortar,crush garlic,parsley and a dash of dry sherry
  2. Place the mixture with ground mean in a bowl and leave it to stand for 20 minutes. place bread in a shallow dish and cover with milk and let it stand for few minutes. add bread,egg,salt and pepper,knead ll ingredients so the are well mixed. make small meatballs and roll each in flour. brown meatballs in a frying pan
  3. With plently of olive oil. finely.drain meatballs on paper towel and place them in casserole dish. finely chop remaining garlic and onion
  4. Fry them in a a skillet till slightly browned ,add chopped tomatoes,pimentos and half of the remaining dry sherry.bring to boil
  5. And cook for 4 minutes. take skillet off heat and pour mixture over the meatballs, place casserole disch in a preheated oven to 180 degrees and back for 25 to 30 minutes.
  6. Serve with light red wine or some fino-sherry and crusty bread
